Healthy Homemade Vegetable Soup Recipes

Soup is one of the easiest things you can possibly cook. Vegetable soup provides one way to boost your veggie intake. Each of the recipes serves four.

  1. Black Bean Soup

Ingredients:

  • Aromatics – 1 onion diced
  • Protein – 2 cans ( 15 oz each) black beans rinsed and drained
  • Spices – 1 tsp cumin and oregano, 1 minced chipotle in adobo
  • Liquid – 6 cups low-sodium vegetable or chicken broth
  • Veggies – 1 poblano chile chopped
  • Garnish – cilantro leaves, chopped

Cook the onion with olive oil until softened.  Add the remaining ingredients except garnishes. Simmer for about 20 to 30 minutes. Puree until smooth, season to taste with salt and pepper and garnish with chopped cilantro leaves.

  1. Tortilla Soup

Ingredients:

  • Aromatics – 1 bunch scallions, thinly sliced
  • Protein – 2 cans shredded rotisserie chicken
  • Spices – ¼ tsp cayenne
  • Liquid – 4 cups low-sodium chicken broth
  • Veggies – 2 roma tomatoes diced
  • Garnish – sliced jalapenos, crumbled baked tortilla chips

Cook the scallions with olive oil until softened.  Add the remaining ingredients except garnishes. Simmer for about 20 to 30 minutes. Season to taste with salt and pepper and garnish with sliced jalapenos and crumbled baked tortilla chips.

  1. Thai Coconut Curry Soup

Ingredients:

  • Aromatics – 2 small shallots, minced
  • Protein – ¼ block extra firm tofu, cubed
  • Spices – 2 tbsp green curry paste
  • Liquid – 2 cans (14 oz each) light coconut milk
  • Veggies – ½ cup each sliced red peppers and bean sprouts
  • Garnish – cilantro, mint, lime juice

Cook the shallots with olive oil until softened.  Add the remaining ingredients except garnishes. Simmer for about 20 to 30 minutes. Season to taste with salt and pepper and garnish with cilantro, mint and lime juice.

  1. Sweet Potato Peanut Soup

Ingredients:

  • Aromatics – 1 large leek, thinly sliced
  • Protein – ¼ cup creamy peanut butter
  • Spices – 2 cloves garlic, 1 pinch cayenne
  • Liquid – 6 cups low-sodium vegetable broth
  • Veggies – 1 large sweet potato, cubed
  • Garnish – chopped roasted peanuts, parsley

Cook the leek with olive oil until softened.  Add the remaining ingredients except garnishes. Simmer for about 20 to 30 minutes. Puree until smooth, season to taste with salt and pepper and garnish with chopped roasted peanuts and parsley.

Ingredients:

  • Aromatics – 1 onion, chopped
  • Protein – ¼ pound lean ground beef
  • Spices – ½ tsp minced thyme leaves
  • Liquid – 6 cups low-sodium mushroom broth
  • Veggies – 1 pound mushroom, sliced
  • Garnish – minced tarragon, low-fat sour milk

Cook the onion with olive oil until softened.  Add the remaining ingredients except garnishes. Simmer for about 20 to 30 minutes. Season to taste with salt and pepper and garnish with minced tarragon and low-fat sour milk.

  1. Tuscan White Bean Soup

Ingredients:

  • Aromatics – 1 onion, chopped, 2 minced garlic cloves
  • Protein – 2 cans (15 oz each) cannellini beans, rinsed
  • Spices – ½ tsp minced rosemary
  • Liquid – 6 cups low-sodium vegetable broth
  • Veggies – 1 cup diced tomato
  • Garnish – 1 drizzle extra-virgin olive oil, parmesan cheese

Cook the onion and the garlic cloves with olive oil until softened.  Add the remaining ingredients except garnishes. Simmer for about 20 to 30 minutes. Season to taste with salt and pepper and garnish with 1 drizzle extra-virgin olive oil and parmesan cheese.

  1. Soup Au Pistou

Ingredients:

  • Aromatics – 2 onions, chopped
  • Protein – 1 chicken breast, cooked and cubed
  • Spices – ½ tsp Herbs de Provence
  • Liquid – 6 cups low-sodium vegetable broth
  • Veggies – 1 cup frozen peas, 1 cup baby spinach and 1 cup diced zucchini
  • Garnish – dollop pesto

Cook the onions with olive oil until softened.  Add the remaining ingredients except garnishes. Simmer for about 20 to 30 minutes. Season to taste with salt and pepper and garnish with dollop pesto.

  1. Curried Lentil Soup

Ingredients:

  • Aromatics – 1 onion, chopped
  • Protein – 1 cup lentils
  • Spices – 1 tbps curry powder, 1 tsp garam masala
  • Liquid – 6 cups low-sodium chicken or vegetable broth
  • Veggies – 2 cups shredded kale
  • Garnish – sliced scallions

Cook the onion with olive oil until softened.  Add the remaining ingredients except garnishes. Simmer for about 20 to 30 minutes. Puree until smooth, season to taste with salt and pepper and garnish with sliced scallions.

  1. Chicken Orzo Soup

Ingredients:

  • Aromatics – 1 onion, diced, 2 minced garlic cloves
  • Protein – 1 chicken breast, cooked and diced
  • Spices – ½ tsp dried thyme
  • Liquid – 6 cups low-sodium chicken broth
  • Veggies – ½ cup diced carrot, ½ cup diced celery
  • Garnish – cooked orzo

Cook the onion and the garlic cloves with olive oil until softened.  Add the remaining ingredients except garnishes. Simmer for about 20 to 30 minutes. Season to taste with salt and pepper and garnish with cooked orzo.

  1. Italian Wedding Soup

Ingredients:

  • Aromatics – 3 shallots, minced
  • Protein – 8 packaged or homemade meatballs
  • Spices – ½ tsp dried oregano, ¼ tsp dried basil
  • Liquid – 6 cups low-sodium chicken broth
  • Veggies – 1 bunch asparagus, trimmed and sliced thin
  • Garnish – 1 slice seeded Italian bread toasted (for dipping)

Cook the shallots with olive oil until softened.  Add the remaining ingredients except garnishes. Simmer for about 20 to 30 minutes. Season to taste with salt and pepper.
