Fajita Soup with Chicken

Ingredients:

2 pounds of chicken meat

3 bell peppers – red, green and yellow

14 ounces of crushed tomatoes

1 cup of frozen corn

6 corn tortillas

2 limes

1 onion

48 ounces of chicken broth

½ cup of cream

2 tablespoons of chili powder

2 tablespoons of cumin

½ tablespoon of black pepper

3 cloves of garlic

Directions:

Step 1

First, put the chicken and some cooking oil (1-2 spoons) in a container and heat it. Then add the chili powder, the cumin, the pepper and mix everything together. You need to cook it for a couple of minutes while stirring.

Step 2

Then add the garlic cloves which need to be peeled and cut into small pieces. Add also the onion, which also need to be peeled, washed and chopped. Then cut the bell peppers into lines without forgetting to wash them first as well. And mix again all the ingredients. Cook again for a couple of minutes more while stirring.

Step 3

Now add the lime juice from the two limes and the ounces of crushed tomatoes and stir the mixture well. Then add the chicken broth and the cream and stir. By this time, you will notice that all the ingredients mixed together look already like soup. Leave the soup this way until it starts boiling. Then you need to add the frozen corn and the tortillas into the soup.

Step 4

Put the container lid on top and let it simmer for about 20 minutes. When this time is up, the soup will be fully cooked and you can have it. Serve it garnished with two pieces of cucumbers, some parsley, and grated mozzarella.

Turkey Noodle Soup

The next recipe is perfect to prepare if you have some turkey meat left. You can also add some other vegetables, like bell peppers if you like, because their taste will complement the taste of the turkey. So, if you are already curious to find out the recipe, here is how to do it!

Ingredients:

1 ½ pounds of cooked turkey

64 ounces of chicken broth

8 ounces of egg noodles

4 tablespoons of butter

1 medium onion

4 celery sticks

4 carrots

3 cloves of garlic

1 ½ cup of diced parsley

2 tablespoons of fresh thyme

salt

Step 1

Get a big pot, where you will cook the soup and heat it. Put the butter in the container and stir it a little so it melts completely. Then add the onion by first peeling it, washing it and chopping it into small pieces. Then add the carrots by first washing them and cutting them into rolls. Then add the celery sticks which again need to be chopped into pieces. Stir all the ingredients well.

Now add the garlic cloves and the cooked turkey. You can cut it the way you want, but it is better if the pieces are not too small. Stir everything well before you add the chicken broth. Then add the diced parsley, the fresh thyme and some pepper and salt to taste. Mix everything well.

Put the lid on the container and wait for the water to boil completely. Then remove the lid and stir the soup. After that let the soup simmer for about 30 minutes. You still need to stir the soup occasionally. When the 30 minutes are up, get the noodles and add them into the soup. Do not forget to stir again.

Then let the soup simmer for 10 more minutes, but this time on low heat. Before you remove it from the heat, taste the soup so you can make sure everything is nicely cooked.
